the fries aren't salted because it allows you to salt to your liking My liking is for it to be salted by the person pulling them out of the grease. Once it hits the table, it's too late.

I also use way more salt than necessary when I have to salt my own fries vs salting fries straight out of the frier. I've never had In and Out but one of my biggest pet peeves is unsalted fries.

From what I understand the big issue is that they aren't blanched after being cut before being fried, so they retain a lot of starch. Also most places tend to have pre-fried fries. Optimally you want to fry them twice under different temps.

It's the combination of fresh cut potatoes and vegetable oil. Since they're not blanched and fried twice like other places they don't get that crisp shell, and the vegi oil doesn't fry as hard as other frying oils.

We discovered them but honestly, they're not that much better. They kind of just turn into airy shoestring potato sticks... and start to pick up more of a burnt flavor. I'm split between those and just having them regular where I'm actually eating what feels like real potatoes than what came out of a Pringle's can. But like others' say, Animal Style covers a multitude of potato sins.

You're not the first person who has told me this. I've tried it. And nope, that just makes them warm for 6 minutes instead of 3. And even for the brief monument they're warm, they're still soggy on the inside and not crispy on the outside. Even that way, they're still the worst fries I've ever had. I'll stick with just a burger and a shake to avoid the disappointment of the fries.

I don't like the cut and or lack of thickness of the fries. Taste is fine. Doesn't mean I want an exaggerated serving like i'm at Five Guys. Just prefer a different cut is all. The move is to get In-N-Out Burgers and fries from Jim's. Not saying Jim's fries are elite, they are just better and an option on the way.

Once upon a time when McDonald's was still using beef fat to fry their fries, you could request switching to vegetable oil instead. Beef fat was superior but I was using this trick to guarantee the fries are freshly fried. But yeah vegetable oil is really bad at making fries.

I know. They still suck. Good fries require a double fry method. Most places get around this by freezing them after the first fry. In n out doesn't do that.

Yes. French fries are a processed food. Slicing up a potato and dumping it in a fryer is not how French fries are made. There are probably 150 steps involved between an Idaho spud ripped from the ground and my mouth at McDonalds, all of them completely necessary.
