Whenever you record you usually do multiple takes because you'll forget or mispronounce something, or have to cough or take a drink, or a dog will bark or a train will go by in the background, or any number of other things.

That's because it's an easy way for creators to make their videos feel more polished. It also allows them to easily disguise multiple takes of a line or shot without having to re-record the whole thing if there's a mistake.
